Eggplant BURGERS & Garlic pasta

Eggplant burger and garlic pasta

Eggplant burger: 

6-7 medium eggplant, high broil for 30 mins or until soft then skin off.

Equal part of flour, breadcrumbs, parmesan(adjust until medium firm texture)

1 egg
1 tsp fennel seeds
1 tbsp soy sauce
1 tbsp chicken or mushroom seasoning
2 tbsp minced garlic
Salt & pepper to taste
Parsley for garnish

Combine all ingredients and set aside for about 30 mins then pan fry in olive oil, form into patties. 

Mushroom sauce:
Olive oil and butter for sautéing 
1 small pk mushrooms
1 large onion
1 whole garlic, minced
1 chili, chopped. Optional
1 tsp thyme
1 tsp sage
½ cup whiskey, I used Jack Daniel because it’s available
1 tbsp soy sauce
2 cups any broth preferred, I used homemade beef bone broth
2 cups whole milk
1 small can cream of mushroom 
Salt and pepper to taste

Saute onions and mushrooms in olive oil and butter until caramelized, add garlic, chili, thyme & sage until fragrant. Add whiskey until liquid is reduced. Add broth, soy sauce and milk, simmer for 15 mins. Add cream of mushroom, salt & pepper. Mix well and simmer for 5 mins. 

Garlic pasta:

4 tbsp chopped garlic
Cooked pasta
Parmesan cheese

Sauté garlic until fragrant, turn off heat, toss pasta and parmesan, garnish with parsley. 

Assemble the pasta, patties and sauce on top in a serving dish, garnish with parsley.
